Cheese
making has long been a part of life in
Vermont. No one knows this more than
Bill Grafton, an Artisanal cheese maker whos family has been making
cheese since 1892. Bill’s Cheeses are dipped in wax that
allows cheeses to age and develop over time, much like a fine wine.
His cheeses come in a variety of ages and flavors, all of
which are similar to the “Farmhouse Cheddar” style found in the
British Isles. Sage is an herb often
associated with Thanksgiving. In celebration of this holiday
we have selected the sage infused, one year aged cheddar for
our “Cheese of the Month”. This colorful and tasty little
cheese can be served by itself, shredded and melted on Crostini or
added to stuffing to give it a little extra kick. If you have a chance stop by and ask us
